Cauliflower Coconut milk Curry

Ingredients

Onion: One Medium Sized

Coconut Milk : One can
Ginger Garlic Paste: Two table spoons
Cashews:half cup
Cilantro: Finely chopped
Garam Masala: one table spoon
Daniya powder: half table spoon

Cut Cauliflower, tomatoes and onions and put aside.

In a medium sized kadai, put some oil and heat it

add mustard seeds, some urad dal, some cumin seeds and allow it to
sputter,add chopped onion and ginger garlic paste and mix.when the onions turn golden brown add cauliflower pieces allow this to cook for few mins, when the Cauliflower is almost cooked add cut tomato pieces, cashews and cook for some more time.

when the cauliflower pieces are fully cooked add salt, chilli powder according to your taste, also add garam masala and daniya powder and stir, to this mixture add coconut milk and simmer forfew seconds..garnish with cilantro..

Serve this curry with vegetable fried rice or roti!!!
