Spinach Fried Rice

Spinach Fried rice: By Chitra

Spinach: two cups finely chopped
Kottimir: one cup finely chopped
Chillies: 4/5 according to taste
Cashews: 1/2 cup/optional
Basmathi rice: three cups
Salt: to Taste
Ginger garlic paste: one spoon
Garam masala/biryani masala: two full spoons


Heat some oil in a kadai/ rice cooker and when the oil is warm enough
add chillies, chopped spinach, chopped kottimir/cilantro and mix

Wait for two minutes and add Ginger Garlic paste and cashews
mix all the above ingredients and add water and Salt

Add Garam masala/ Biryani Masala and stir
then add basmathi rice to the above mixture

(Two cups water per one cup rice)

Wait until the rice is fully cooked.

Enjoy the Spinach fried rice, serve with Raitha/ Perugu Pachadi...

    I am usually not a big fan of Spinach, and was lil apprehensive in trying it out. But once I had it, I couldn't stop eating.
