Vegetable Biryani

Basmati Rice: 3 cups Potato: One /cut into pieces Sweet Peas: One small cup Carrot: Two small/ cut into pieces Beans:10/ cut into pieces ginger garlic paste: Two tea spoons Priya Biryani Paste: Two full spoons Cilantro:  chopped Mint: chopped green chili: 5/spilt into two In a electric rice cooker add some oil  wait untill it gets little warm. Add cut potatoes,carrotsgreenpeas,beans, green chili , priya biryani paste, ginger garlic paste and mix well.Close the lid for 2 mins and then mix again, Add 5 cups of water , add salt to taste, add chopped cilantro and chopped mint. Add basmati riceand wait until the rice is fully cooked. Serve  hot with some Gravy curry and Raita

Cilantro Lemon rice

Basmathi Rice: Two cups Cilantro: one cup finely chopped Lemon:two/three green chili: 4 Onion: finely chopped ginger garlic paste: two tea spoons In a pan heat some oil, add some cumin seeds,allow it to sputter.Then add green chillies, ginger garlic paste and add onions and stir for some time. when the onions turn light golden yellow add chopped cilantro and mix , after few seconds add 3 cups of water, salt to taste now add basmathi rice. Allow rice to cook completly, when the rice is almost done add some lemon juice to the mixture and stir. This can be eaten with yogurt/ raita.

Lauki Kofta Curry

Ingredients Lauki: one big Oil: for frying Kofta Besan : one cup Cilantro: half cup chopped Tomato: 2 finely chopped Onion : One big Garam masala: one tea spoon fry the chopped tomatoes and grind, make a paste and put aside.Finely chop the onion. Grate the lauki/sorakai and squeeze to remove moisture and put aside, Add some besan flour and kneed.Add chili powder , salt, cilantro and make small portions of this mixture and make small ball shaped portions. Fry these portions in the Oil. Place these Koftas on a tissue. For Gravy: In a cooking pan add some oil, add some jeera/cumin allow it to sputter and when the oil is warm enough add tomato paste, and finely chopped onion and stir occasionally. Add ginger garlic paste, chili powder , salt , Garam masala and simmer, finally add the Kofta balls when the rest pf the mixture is cooked completely, add Kofta in the last minute. Serve with plain rice or with freid vegetable rice. tasty curry ready in minutes!!!

Red radish Chutney

Ingredients Red radish/Small radish: 12 Red Chillies: 4 Daniya: one tea spoon Cumin seeds: One tea Spoon Urad Dal: two tea spoons Tamarind: little amount In a pan add some Oil and when the oil is warm enough add cut radish, red chilies, daiya, urad dal, cumin seeds and fry for some time. Aster few minutes add soaked tamarind to the above mixture. fry for some more time. Allow this to cool. In a grinder add the above ingredients , add salt to taste and grind. Serve with rice or rice cakes. This is very tasty chutney.

Carrrot Halwa

Ingredients: Carrots: 12 big sized Ghee: one small can Sugar: 3 cups/add more for extra sweet ness Cashews: half cup chopped Dry fruits: half cup Saffron: 4 strings Milk: one liter Fry carrot s in the ghee until the carrots are soft and add milk, Sugar,cashew nuts, dry fruits and boil on simmer for another half hour. refrigerate and serve chilled.

Yellow Squash Chutney

Yellow Squash : 3 Tamarind : three four pieces Oil:three table spoons Cumin seeds: one table spoon Daniya seeds: half table spoon urad dal: one table spoon Red chilli: 4 add more to make more spicy Cut squash into small pieces Soak the tamarind in some water Add oil in a small pan Add cumin seeds Add urad dal Add some red chilli wait until the dal turns light brown Add Sqaush piecesuntil they turn light golden yellow color In a grider jar add all the above ingredients, also add some salt /as per taste, add soaked tamarind, Add some daniya powder/coriander powder ... grind all the ingredients.. Squash chutney ready in few minutes!!!

Cauliflower Coconut milk Curry

Ingredients Onion: One Medium Sized Coconut Milk : One can Ginger Garlic Paste: Two table spoons Cashews:half cup Cilantro: Finely chopped Garam Masala: one table spoon Daniya powder: half table spoon Cut Cauliflower, tomatoes and onions and put aside. In a medium sized kadai, put some oil and heat it add mustard seeds, some urad dal, some cumin seeds and allow it to sputter,add chopped onion and ginger garlic paste and mix.when the onions turn golden brown add cauliflower pieces allow this to cook for few mins, when the Cauliflower is almost cooked add cut tomato pieces, cashews and cook for some more time. when the cauliflower pieces are fully cooked add salt, chilli powder according to your taste, also add garam masala and daniya powder and stir, to this mixture add coconut milk and simmer forfew seconds..garnish with cilantro.. Serve this curry with vegetable fried rice or roti!!! yummy curry ready in few minutes!!

Spinach Fried Rice

Spinach Fried rice: By Chitra Spinach: two cups finely chopped Kottimir: one cup finely chopped Chillies: 4/5 according to taste Cashews: 1/2 cup/optional Basmathi rice: three cups Salt: to Taste Ginger garlic paste: one spoon Garam masala/biryani masala: two full spoons Heat some oil in a kadai/ rice cooker and when the oil is warm enough add chillies, chopped spinach, chopped kottimir/cilantro and mix Wait for two minutes and add Ginger Garlic paste and cashews mix all the above ingredients and add water and Salt Add Garam masala/ Biryani Masala and stir then add basmathi rice to the above mixture (Two cups water per one cup rice) Wait until the rice is fully cooked. Enjoy the Spinach fried rice, serve with Raitha/ Perugu Pachadi... When U r hungry..Try a new receipe!!!
